We produce our own fish and aquaponic vegetables at Vero Beach Freedom Farm, and we also partner with other producers who have the same vision and commitment to quality. Dr. Michael B Timmons is the founder of Professor T's Fish. Professor T teaches in the Department of Biological and Environmental Engineering at Cornell University. He was one of the founders of the Aquacultural Engineering Society and literally wrote the book on recirculating aquaculture (it’s pretty technical, but quite impressive).
Professor T is a father, a grandfather, and is personally committed to delivering only the finest quality, responsibly caught or farmed seafood. If he wouldn’t serve it to his family, he won’t sell it to you.
Vice President of Digital Marketing
Rosa Barron is a former student of Professor T and a graduate of Cornell University. Her family has been in the seafood industry in Central America since the 1960’s. She has over 20 years of experience in recirculating aquaculture design, seafood warehouse and plant operations, seafood safety, and financial management. Her other areas of strength are health and fitness, cooking, and social media management. She was one of the first to introduce sustainable aquaculture to countries such as Nicaragua and El Salvador and has taught university courses in Central America in aquaculture design and sustainability. She was a collaborator on the first edition of the yellow book. She now lives in the Greater Sacramento Area with her husband and 3 kids and enjoys cooking seafood and developing healthy, delicious recipes for her family.
Business to Consumer Manager
Hank has spent over three decades working in the advertising/marketing industry in New York City. Over the course of that time, he has built a career as award-winning copywriter, creative director and brand strategist at numerous New York ad agencies. His client experience includes: Aruba, JC Penney, KIND Snacks, Mars, Pernod-Ricard, Panasonic, Ralston-Purina, Diageo, Volvo and more. Since 2002, Hank has worked at Green Team Global, where he currently serves as Executive Vice President, Communication Strategy. In this role, he helps clients develop both the strategic foundations of their sustainability platforms, as well as how they can be communicated in the marketplace. In the NGO and non-profit world, Hank’s client experience includes: World Wildlife Fund, Conservation International, National Geographic, Natural Resources Defense Council, Environmental Defense Fund, International Union for Conservation of Nature (IUCN), Ballet Hispanico, and the American Cancer Society. Hank is a sought-after speaker on the topic of sustainability marketing and responsible travel. He has addressed audiences in colleges, universities and business conferences around the world.
Web Developer & Product Manager
Clare Choi is our Web Developer & Product Manager her at Atlantic Pacific Jade. Clare is responsible for managing websites, creating marketing material and social media content. She is also actively collecting essential data to provide useful insights for the company. She is obsessed with all tech-related things and is constantly looking for ways to help others by utilizing data. Clare graduated from Cornell University with a Bachelor of Science degree in Development Sociology, and continued on to earn a Master of Science degree in Information Science.
Katie is our newest addition to the Professor T's family. Katie graduated from Texas A&M University with a Bachelor of Science degree in Nutritional Sciences with a focus in Molecular Nutrition. She participated in a number of years of research in both the Nutritional Sciences department and the Toxicology department at Texas A&M as a research assistant developing nutritional interventions during the developmental stages of disease in humans. Katie is a passionate advocate for animal welfare, sustainable, ethical and regenerative farming, and a wiz at developing and growing both small and large companies through the use of social media and digital marketing. She has continued her education in both animal nutrition as well as full front and back end web development, which has enabled her to grow a company's following organically, and provide true transparency between the consumer and the company itself.
