By now, most of us know that supporting responsible farming is important to our health and our future. Every product on this site is fully traceable and held to Professor T's highest standards. What does this mean? All of our seafood is either wild-caught following stringent environmental standards, or farmed in recirculating, minimal waste systems often coupled with aquaponic environmentally friendly methods. We never allow the use of antibiotics or hormones. In fact, if Professor T wouldn't feed it to his grandchildren, you won't see it here.

Of course, there’s a Professor T. And here he is! Dr. Michael B Timmons. Professor T teaches in the Department of Biological and Environmental Engineering at Cornell University. He was one of the founders of the Aquacultural Engineering Society and literally wrote the book on recirculating aquaculture (it’s pretty technical, but quite impressive).
Professor T is a father, a grandfather, and is personally committed to delivering only the finest quality, responsibly caught or farmed seafood. If he wouldn’t serve it to his family, he won’t sell it to you.
